The Perfect Roasted Chicken

Well, since I have been Suzy Homemaker today, I thought I would share with you the easiest and most delicious roasted chicken recipe.  I scoured my sources and settled in on a recipe posted by Jamie Oliver at jamieoliver.com.  I worked with what I had.  I did not have celery, and I only had dried herbs.  But, the outcome was perfection! 

Here is the B Charmer short version:

Preheat oven to 475
Pile root vegetables on bottom of roasting pan.
Season and drizzle with olive oil.
Add halved garlic cloves, or a tablespoon of  minced garlic.
Place chicken directly on vegetables.
Season chicken with Jamie's herbs, or I used an Italian herb blend.
Salt and pepper well.  I used Kosher salt.
Pierce a whole lemon with a fork several times.  Microwave the lemon for40 seconds.  Place whole lemon in the cavity after seasoning the cavity very well with the Italian herbs.  Of course, one must remember to remove the gizzards as well.
Drizzle chicken with olive oil.


Place the chicken in the oven and immediately reduce heat to 400. 
Bake uncovered for 80 minutes.  I did not have to baste, and my veggies did not burn.  But you would certainly want to keep an eye on things. 

It was most delicious!
